The recipe cards are a creation of Glen Elie, a graduate from Bournemouth College. His talent was recognised early and was awarded with the accolade of most promising student - since then his career has moved in leaps and bounds working in France at the following restaurants
Michel Guérard, 3 star Michelin, De Eugénie Le Bains
Le Chabichou, 2 star Michelin, Courchevel and St Tropez
On returning to England he worked for Albert Roux at Le Gavroche, 3 star Michelin restaurant in Mayfair, London. In 1990 Albert Roux then placed Glen at Hanbury Manor, Hertfordshire, where after only 2 years he achieved 4 AA Rosettes for the Zodiac gourmet restaurant. One of only a handful of establishments in the country had achieved this accolade. In 1998 he bought a run down bistro in Truro, Cornwall, which after just 4 months he turned around and two years later sold for a considerable profit. After marrying his wife Christine he returned to Dorset to start a family. His next challenge was then the brand new Harbour Heights Hotel where he created an enviable reputation for fine dining and achieving 2 AA Rosettes after just one year.
